Pumpkin Energy Bites!

We love eating these in the morning with coffee as a pre-run snack or even at night as a dessert. Recipe by @veggie_trails

  1. Serves: 12-15
  2. Time: 15 mins.

Ingredients

  • 1/2 cup softened dates
  • 1/4 cup Great Lakes Collagen Peptides
  • 1 cup nuts (use any combination, I did pecans and hazelnuts!) 
  • 1/4 cup nut butter
  • 1/4 cup pumpkin puree
  • 1 cup oats

Directions

  • Blend all the ingredients together in a food processor. 
  • It will be VERY sticky. 
  • Then add oats until you get your desired consistency to form into a ball (1 cup). 
  • Use a cookie scooper to make balls and freeze. 
  • I like to keep them in the freezer!
