Makes 6 roll-ups
Ingredients
- 1 cup fresh blueberries, rinsed and dried
- 1 cup fresh blackberries, rinsed and dried
- 2 tablespoons honey or pure maple syrup
- 1 tablespoon (12 g)Â Great Lakes Wellness Beef Gelatin
Directions
- Preheat the oven to 175°F. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
- Add the blueberries, blackberries, and honey or maple syrup to a blender. Blend until smooth.
- Transfer ½ cup of the berry purée to a small saucepan. Sprinkle the Beef Gelatin evenly over the surface and let it sit for 5 minutes.
- Warm the mixture over low heat, whisking constantly, just until the gelatin has dissolved completely. Do not boil.
- Stir the gelatin mixture into the remaining berry purée until evenly combined.
- Pour the mixture onto the prepared baking sheet. Spread it into an even rectangle approximately â…› inch thick, taking care not to spread it too thin around the edges.
- Oven-dry until the surface is no longer wet, the center does not indent when lightly touched, and the leather remains flexible. Begin checking after 2 hours and continue drying as needed, checking every 20–30 minutes.
- Remove from the oven and let cool until easy to handle. Cut into 6 strips, gently peel each strip from the parchment or baking mat, and roll.
- Wrap the roll-ups individually in parchment paper and store them in an airtight container. For best quality, enjoy within one week or refrigerate for longer storage.
