The alternating layers make this recipe look impressive, but preparing it is surprisingly simple. Allow each layer to firm briefly before adding the next, then chill the finished gelatin until completely set.

  1. Whisk the coconut milk until smooth. Pour ¼ cup of the peach juice into one small bowl and ¼ cup of the coconut milk into a second bowl.
  2. Sprinkle 2 tablespoons of Beef Gelatin evenly over the liquid in each bowl. Let both mixtures sit for approximately 5 minutes to allow the gelatin to bloom.
  3. Add the remaining peach juice to one small saucepan and the remaining coconut milk to another. Add the corresponding bloomed gelatin and 2 tablespoons of maple syrup to each saucepan.
  4. Warm both mixtures over low heat, stirring frequently, until the gelatin is completely dissolved. Do not allow the mixtures to boil. Remove them from the heat and let them cool slightly before layering.
  5. Pour a thin layer of the peach mixture into an 8-inch square dish or another shallow container. Place it in the freezer for 5–10 minutes, or until firm enough to support the next layer.
  6. Add a layer of the coconut mixture and return the dish to the freezer for another 5–10 minutes. Continue alternating the peach and cream mixtures until both are used. If either mixture begins to set in the saucepan, warm it gently until pourable.
  7. After adding the final layer, refrigerate the gelatin for at least 1 hour, or until completely set.
  8. Cut into squares and serve chilled.
