These Collagen Pumpkin Bites combine pumpkin purée, pumpkin pie spice, oat flour, almond flour, gelatin, and collagen in a festive seasonal treat. Shape them like miniature pumpkins and finish each one with a chocolate chip “stem” for a fun autumn touch.

Ingredients
- ½ cup pumpkin purée
- ⅓ cup honey or pure maple syrup
- Up to ¼ cup unsweetened almond milk
- 1 cup commercially heat-treated oat flour labeled for no-bake use
- 1 cup finely ground almond flour
- 2 tablespoons (24 g) Great Lakes Wellness Beef Gelatin
- 6 level scoops (approximately 60 g) Great Lakes Wellness Collagen Peptides
- 1 tablespoon pumpkin pie spice
- 10–12 chocolate chips, for decorating
Directions
- Line a plate or small baking sheet with parchment paper.
- Whisk together the oat flour, almond flour, Beef Gelatin, Collagen Peptides, and pumpkin pie spice in a medium bowl, breaking up any lumps.
- Add the pumpkin purée, honey or maple syrup, and 2 tablespoons of almond milk. Stir until evenly combined.
- Add additional almond milk, 1 teaspoon at a time, only if the mixture is too dry to hold together.
- Refrigerate the dough for 20–30 minutes. If it remains too sticky to roll, chill it for another 10 minutes.
- Portion approximately 3 tablespoons of dough for each bite and roll into balls. Use a toothpick to make pumpkin-like indentations around each ball.
- Press one chocolate chip into the top of each bite to create a stem.
- Refrigerate for at least 30 minutes before serving. Store in an airtight container in the refrigerator and enjoy within four days.
