Halloween Gelatin Brain

DessertsGelatin

This spooky Halloween Gelatin Brain combines pomegranate juice, coconut water, and Great Lakes Wellness Beef Gelatin, finished with a maple syrup “fake blood” drizzle.

Bring a little fright to your Halloween table with this spooky Gelatin Brain. Made with pomegranate juice, coconut water, maple syrup, and Great Lakes Wellness Beef Gelatin, it sets in a brain-shaped mold and gets a dramatic finish with a simple maple syrup “fake blood.”

Makes 1 brain mold

Ingredients

Gelatin brain

Fake blood

  • ¼ cup pure maple syrup
  • 3–4 drops red food coloring
  • Halloween sprinkles, for serving (optional)

Directions

  1. Pour the cold coconut water into a medium saucepan. Sprinkle the Beef Gelatin evenly over the surface and let it sit for 5 minutes to bloom.
  2. Add the pomegranate juice and maple syrup. Use an electric whisk or handheld milk frother to combine.
  3. Heat over medium heat for 3–5 minutes, stirring gently with a spatula, until the gelatin has dissolved completely and the mixture is very hot. Do not allow it to simmer or boil.
  4. Remove from the heat and gently skim off any foam from the surface. Save the foam for a batch of bonus gummies, if you like.
  5. Pour the mixture into a brain-shaped gelatin mold.
  6. Refrigerate for 4–5 hours, or until completely firm.
  7. In a small bowl, stir together the maple syrup and red food coloring until the color is even.
  8. To release the brain, dip the outside of the mold in warm water for 5–10 seconds. Place a serving plate on top, flip it over, and gently lift the mold away.
  9. Pour the fake blood over the brain and scatter Halloween sprinkles around the plate, if using. Cut into pieces and serve.

Cover and refrigerate leftovers for up to 3 days.
