Citrus Coconut Snowballs

This fun treat is quite the conundrum - it looks like winter but tastes like summer! Refreshing citrus fruit flavors combined with coconut and sea salt give these little snowballs a taste of the tropics you can enjoy any time of year.

Ingredients

  • 1-1/4 cups blanched almond flour
  • 1 cup unsweetened shredded coconut (plus more for rolling)
  • 1/3 cup Great Lakes Collagen Peptides
  • 2 tablespoons coconut flour
  • 1/4 teaspoon sea salt
  • 3 tablespoons honey
  • 2 tablespoons coconut oil
  • 2 tablespoons fresh orange juice
  • 1 tablespoon finely grated orange zest
  • 1 teaspoon vanilla extract

Directions

  • Preheat the oven to 275ºF. Line a baking sheet with parchment paper.
  • In a food processor fitted with the steel blade, combine the almond flour, shredded coconut, collagen, coconut flour, and salt.
  • Process until finely ground, about 25 seconds. Add the honey, coconut oil, orange juice, orange zest, and vanilla. Process until a dough forms.
  • Roll the dough into 1-inch balls, then roll in shredded coconut and place on the baking sheet.
  • Bake for 20 minutes, rotating the pan once halfway through. Cool completely before serving.
