SWEET POTATO COLLAGEN BROWNIES

The fudgiest, most DELISH brownies you would never in a million years guess they are refined sugar-free, paleo, and contain sweet potatoes + collagen even all my siblings were obsessed and they’re a tough crowd! I love the addition of Great Lakes Collagen because it’s high-quality and supports nail, skin, hair, and joint health. Recipe by @calla.ramont

  1. Serves: 9-16
  2. Time: 1hr 15 min prep + 40 min bake time

Ingredients

  • 1/2 cup almond flour
  • 1 medium sweet potato (about 1 cup baked and skinned)
  • 1/4 cup almond butter
  • 2/3 cup coconut sugar
  • 2 scoops Great Lakes Collagen Peptides
  • 2 eggs
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking soda 
  • Dash of seasalt

Directions

  • Preheat oven to 350F. Pierce holes in sweet potato and bake until you can easily stick a fork through (about 1 hour). Alternatively, you can microwave or boil your sweet potato. Once it’s cooked, peel off the skin. PS. You can do this entire step in advance
  • In your food processor, add all ingredients and mix until fully combined.
  • Line an 8x8 baking dish with parchment paper. Pour batter into dish and smooth out the top.
  • Bake 35-40 min or until a toothpick comes out clean.
  • Wait until they fully cool to remove from dish and slice.
  • Optional— sprinkle with a little bit of powdered sugar!
