The fudgiest, most DELISH brownies you would never in a million years guess they are refined sugar-free, paleo, and contain sweet potatoes + collagen even all my siblings were obsessed and they’re a tough crowd! - Time: 1hr 15 min prep + 40 min bake time
Ingredients
- 1/2 cup almond flour
- 1 medium sweet potato (about 1 cup baked and skinned)
- 1/4 cup almond butter
- 2/3 cup coconut sugar
- 2 scoops Great Lakes Collagen Peptides
- 2 eggs
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- Dash of seasalt
Directions
- Preheat oven to 350F. Pierce holes in sweet potato and bake until you can easily stick a fork through (about 1 hour). Alternatively, you can microwave or boil your sweet potato. Once it’s cooked, peel off the skin. PS. You can do this entire step in advance
- In your food processor, add all ingredients and mix until fully combined.
- Line an 8x8 baking dish with parchment paper. Pour batter into dish and smooth out the top.
- Bake 35-40 min or until a toothpick comes out clean.
- Wait until they fully cool to remove from dish and slice.
- Optional— sprinkle with a little bit of powdered sugar!
