This healthy and delicious soup has all the hearty flavors of a stuffed pepper but is much easier and quicker to prepare. Enjoy a full serving of collagen and vegetables in every bowl, so warm and filling it’s sure to satisfy your whole family.

Ingredients
- 3 cups cooked brown rice (omit for paleo diet)
- 1 lb 95% lean ground beef
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1 cup finely diced onion
- 3 cloves garlic (chopped)
- 1 cup Great Lakes Collagen Peptides
- 2 cans (14.5 oz each can petite diced tomatoes)
- 1 3/4 cups tomato sauce
- 2 cups reduced sodium (fat-free chicken broth)
- 1/2 tsp dried oregano
- ½ tsp onion powder
- salt and fresh pepper to taste
Directions
- Brown ground beef in a large pot. Drain fat if any and reduce heat to low-medium.
- Add peppers, onions and garlic and cook for 5 minutes.
- Add Chicken broth, tomato sauce, canned tomatoes, dried oregano and onion powder. Season with salt and pepper to taste.
- Cover and simmer for 30 minutes on low heat.
- Serve 1 ½ cups of soup and top with ½ cup of brown rice.
