Stuffed Pepper Soup

This healthy and delicious soup has all the hearty flavors of a stuffed pepper but is much easier and quicker to prepare. Enjoy a full serving of collagen and vegetables in every bowl, so warm and filling it’s sure to satisfy your whole family.

Ingredients

  • 3 cups cooked brown rice (omit for paleo diet)
  • 1 lb 95% lean ground beef
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1 cup finely diced onion
  • 3 cloves garlic (chopped)
  • 1 cup Great Lakes Gelatin Collagen Hydrolysate
  • 2 cans (14.5 oz each can petite diced tomatoes)
  • 1 3/4 cups tomato sauce
  • 2 cups reduced sodium (fat-free chicken broth)
  • 1/2 tsp dried oregano
  • ½ tsp onion powder
  • salt and fresh pepper to taste
  • Directions

  • Brown ground beef in a large pot. Drain fat if any and reduce heat to low-medium.
  • Add peppers, onions and garlic and cook for 5 minutes.
  • Add Chicken broth, tomato sauce, canned tomatoes, dried oregano and onion powder. Season with salt and pepper to taste.
  • Cover and simmer for 30 minutes on low heat.
  • Serve 1 ½ cups of soup and top with ½ cup of brown rice.
