Ingredients
- 2 tablespoons coconut oil, softened
 - 1 ½ cups almond flour
 - 2 tablespoons date syrup
 - Zest and juice from one lemon
 - ½ teaspoon pure vanilla extract
 - Small pinch of sea salt
 - 4 scoops (20 grams) Great Lakes MCT Powder

 - 1 teaspoon poppy seeds
 - ¼ cup shredded, unsweetened coconut, plus more for rolling
 
Directions
- Combine all ingredients in a bowl and mix well to combine.
 - Roll into small balls, about 1 inch in diameter and roll in shredded coconut.
 - Store in refrigerator for up to 5 days (but they won’t last that long!)
