Lemon Poppy Seed Coconut Bites
A no-bake, naturally sweet bite-sized treat. Dotted with poppy seeds and flavored with lemon and coconut with the goodness of MCT powder and collagen.

Ingredients

  • 2 tablespoons coconut oil, softened
  • 1 ½ cups almond flour
  • 2 tablespoons date syrup
  • Zest and juice from one lemon
  • ½ teaspoon pure vanilla extract
  • Small pinch of sea salt
  • 2 scoops (20 grams) Great Lakes MCT Powder
  • 2 scoops (24 grams) Great Lakes Collagen Hydrolysate
  • 1 teaspoon poppy seeds
  • ¼ cup shredded, unsweetened coconut, plus more for rolling
  • Directions

  • Combine all ingredients in a bowl and mix well to combine.
  • Roll into small balls, about 1 inch in diameter and roll in shredded coconut.
  • Store in refrigerator for up to 5 days (but they won’t last that long!)
