Lemon Poppy Seed Coconut Bites

A no bake, naturally sweet, energy bite-sized treat. Dotted with poppy seeds and flavored with lemon and coconut. By @wild.thistle.kitchen


  1. Servings: 20 protein balls
  2. Time:10 mins

Ingredients

  • 2 tablespoons coconut oil, softened
  • 1 ½ cups almond flour
  • 2 tablespoons date syrup
  • Zest and juice from one lemon
  • ½ teaspoon pure vanilla extract
  • Small pinch of sea salt
  • 4 scoops (20 grams) Great Lakes MCT Powder

  • 1 teaspoon poppy seeds
  • ¼ cup shredded, unsweetened coconut, plus more for rolling

Directions

  • Combine all ingredients in a bowl and mix well to combine. 
  • Roll into small balls, about 1 inch in diameter and roll in shredded coconut. 
  • Store in refrigerator for up to 5 days (but they won’t last that long!)
