Collagen Chocolate Chip Cookies

The ultimate ‘healthy’ chocolate chip cookie made with collagen peptides, alternative flours and all-natural maple sugar. These cookies are gluten-free, chewy, gooey and full of flavor!

Ingredients

  • 1 cup thick raw cashew butter
  • 1 cup maple sugar⁠
  • 1 egg, whisked
  • 1/4 cup Great Lakes Collagen Hydrolysate
  • 1 Tbsp. tapioca flour
  • 1 Tbsp. coconut flour⁠
  • 1 tsp. baking soda⁠⁠
  • 1 tsp. vanilla extract
  • pinch of salt⁠
  • 1/3 cup chocolate chips⁠
  • Directions

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  • In a large bowl, mix together cashew butter, maple sugar, and egg.
  • Then mix in collagen, tapioca, coconut flour, baking soda, vanilla, salt and chocolate chips.
  • Use a cookie scoop to scoop out around 2 tablespoons of dough and make into a round ball. Place parchment paper lined baking sheet. This dough will create about 12 cookies.
  • Place baking sheet into the oven and bake for 10-12 minutes.
  • Let cool and Enjoy!
