Collagen Banana Bread

Our favorite banana bread. It’s super moist in texture and rich in flavor. This healthy banana bread needs only 2-3 rip bananas to complete! By @FreshlyDafna

  2. Time: 10 mins prep, 60 mins cook time

Ingredients

Dry ingredients

  • 2 cups almond flour
  • 2/3 cup oat flour
  • 1/2 cup Great Lakes Collagen Peptides
  • 1/4 cup tapioca flour
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt

Wet ingredients

  • 1 cup mashed banana (about 2-3 very ripe bananas) 
  • ¾ cup coconut sugar
  • ¼ cup coconut oil, melted and cooled
  • 4 eggs
  • 1 tsp vanilla

Directions

  • Heat oven to 350 degrees and prepare a loaf pan by lining with parchment paper or greasing with additional oil. 
  • In a large bowl add all the dry ingredients and whisk together well until thoroughly blended and no lumps of flour remain. 
  • In the bowl of a stand mixer, or in a large bowl if mixing by hand, beat together all the wet ingredients until light and bubbly. 
  • Add in all the dry ingredients to the wet mixture and stir until just combined. Scraping down the sides of the bowl if necessary. 
  • Pour the batter out into the prepared loaf pan and using a rubber spatula spread the batter out to create an even layer. 
  • Bake in the oven for 58 minutes to 1 hour or until a toothpick pierced into the center of the loaf comes out cleanly. 
  • Remove from oven and let rest in loaf pan for at least 10-15 minutes before transferring to a wire rack to cool completely. Then slice and enjoy!
