- 10 medjool dates, pitted
- ½ cup almonds
- ¾ cup almond flour
- 5 tbsp unsweetened cocoa powder
- 2 scoops GLW Chocolate Collagen
- ¼ tsp salt 2 tbsp coconut oil, melted
- Crushed pistachios for rolling
- Cocoa powdered for rolling
Makes 16 truffles
Place the dates, almonds, almond flour, cocoa powder, collagen and salt into a food processor and blend until well combined. While blending, add in the coconut oil and continue to blend until a ball begins to form. Use a cookie scooper to make 16 evenly sized balls and roll them into the pistachios or cocoa powder. Serve.
*Note - the dates should be very fresh and soft/sticky. If your dates are not soft, let them sit in boiling water for 10 minutes and then drain the water well before using them.
