Chicken Fajitas

Smoky, flavorful, juicy chicken combined with crisp, ripe peppers and onions makes for one tasty yet simple weeknight recipe that gives everyone in your family a boost of collagen to keep them feeling full & healthy!

Ingredients

  • 1 (14.5oz) can diced tomatoes (or diced tomatoes with green chiles), no salt
  • 1 medium onion cut into quarters sliced into strips⁠
  • 1 medium red bell pepper cut into strips
  • 1 medium orange bell pepper cut into strips
  • 1/2 cup Great Lakes Collagen Peptides
  • 1 tsp. ground chile powder⁠
  • 1 tsp. ground cumin⁠
  • ½ tsp. ground black pepper⁠
  • 2 Tbsp. fresh lime juice⁠
  • 1 lb. raw chicken breast boneless, skinless and sliced⁠
  •  8 - 6-inch whole wheat flour tortillas warm⁠
  • Finely chopped cilantro⁠
  • Low-fat sour cream⁠

Directions

  • Heat 1 Tbsp. olive oil and then sautee the chicken strips until cooked.
  • In a separate pain, sautee onions until golden brown (about 5-7 minutes).
  • Add peppers, tomatoes, onion, collagen hydrolysate, chile powder, cumin, black pepper and lime juice.
  • When the chicken and vegetables are cooked combine.
  • Evenly divide mixture between tortillas, top with sour cream and cilantro.
