Chai Apricot Oat Cookies

Great Lakes Wellness Chai Collagen and dried apricots spice up these oatmeal cookies perfectly! Pour yourself some Chai tea and enjoy a delicious cookie (or two, we won't tell!).

Ingredients

  • ¼ cup dried apricots, chopped 
  • 1 cup rolled oats 
  • ½ cup almond flour 
  • ¼ cup flax meal 
  • ½ tsp baking soda 
  • Pinch sea salt 
  • 2 scoops Great Lakes Wellness Chai Collagen
  • ¼ cup coconut sugar 
  • 2 tbsp coconut oil, melted 
  • ⅓ cup unsweetened applesauce 
  • 1 tsp vanilla extract

Preheat the oven to 350 F and prepare a baking sheet with parchment paper. In a mixing bowl, stir together the oats, almond flour, flax, baking soda, salt, Great Lakes Wellness Chai Collagen and apricot pieces. In another bowl, stir together the sugar, coconut oil, applesauce and extract. Add the wet ingredients to the dry and stir until a dough forms. Separate the dough into 8 evenly sized balls and place them on the baking sheet and then press them down flat. Top with more apricot pieces if desired and bake the cookies for 10-12 minutes and golden brown. Let the cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack to continue cooling before serving.
