Ingredients:
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons cinnamon
- 2 scoops of Great Lakes Collagen
- 1 large banana
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 tablespoons olive oil
- 1 cup milk
- 1–2 tablespoons sugar
Directions:
- In a bowl, combine the flour, cinnamon, Great Lakes Collagen, and baking powder. Set aside.
- In a separate large bowl, mash the banana with a fork.
- Crack in the eggs and whisk together until well combined.
- Add the milk, vanilla extract, olive oil, and sugar to the banana mixture.
- Gradually whisk the dry ingredients into the wet ingredients until fully incorporated.
- Heat a griddle or large frying pan with cooking spray or butter over medium heat. Pour in 1/2 cup of batter for each pancake.
- Cook until bubbles form on the surface, then flip. Repeat with the remaining batter.
