Baked Oatmeal

A cross between a breakfast bar and traditional creamy oatmeal, this warm, satisfying treat is the perfect, no-fuss, make ahead breakfast for fall. Loaded with wholesome, healthy ingredients to start your day off right plus this recipe can easily be altered to suit your personal taste!

  1. Serves: 6-8
  2. Time: 10 mins. prep, 20 mins. bake

Ingredients

  • 2 cups uncooked quick oats
  • 1/2 cup packed brown sugar substitute
  • 1/4 cup ground flax seed
  • 1/4 tsp cinnamon
  • 1/2 banana
  • 1/2 cup blueberries
  • 1/4 cup craisins
  • 1 tsp. baking powder
  • 1/2 cup Great Lakes Collagen Peptides
  • 1 1/2 cups skim milk or nut milk
  • 1/2 cup apple sauce⁠
  • 2 Tbsp. melted butter⁠
  • 1 large egg, beaten⁠
  • Cooking spray⁠

Directions

  • Coat with cooking spray an 8-inch square baking pan. Preheat oven to 375°.
  • In a large bowl mix oats, brown sugar substitute, ground flax seed, cinnamon, baking powder, banana, blueberries and craisins.
  • In a separate bowl mix the egg, nut milk and collagen together. When completely mixed, add in the apple sauce and melted butter and mix until well combined.
  • Add wet mixture to the dry ingredients and stir well.
  • Pour oatmeal mixture into your coated baking dish and place in the oven for 25 minutes.
