Salted Caramel Marshmallows

On a chilly day, your hot chocolate will be begging for more of these scrumptious salted caramel marshmallows made with Great Lakes Wellness Culinary Gelatin!

Serving Size: 1 marshmallow

Prepare a loaf pan with parchment paper and dust with powdered sugar–be generous. In a bowl of a stand alone mixer, add the Great Lakes Wellness Gelatin and ⅓ cup of water and stir to combine. Meanwhile, place the remaining water, brown sugar, agave, and vanilla into a heavy bottom pot and turn on medium heat. Stir occasionally until the sugar has dissolved. Turn on high heat and cook for 2-3 minutes and the mixture comes to a rapid boil and begins to caramelize. 

Pour the hot mixture into the bowl with the gelatin and mix using a whisk attachment on a low speed for 2-3 minutes. Increase the speed to medium for another 2-3 minutes and then to high for an additional 2-5 minutes and the mixture is thick and glossy. Just before the marshmallow is done mixing, add in the salt. Immediately pour it into the prepared loaf pan and spread it out into an even layer using a rubber spatula. 

Let sit at room temperature for 6-8 hours and chill in the refrigerator for 2-3 hours. Once the marshmallow has set, dust with powdered sugar and gently peel off the parchment paper. Dust any sticky sides and cut into cubes. Toss the cubes in more powdered sugar if sticky and serve.
