Ingredients
Crust:
- 3 cups mini pretzels
- 4 tbsp coconut sugar
- ½ cup grass fed butter, melted
Pumpkin Layer:
- 7oz can sweetened condensed coconut milk
- 15oz can pumpkin puree
- ½ cup coconut sugar
- ¼ cup tapioca flour
- 3 scoops Great Lakes Wellness Daily Digestion Honey + Cinnamon Collagen
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- ¼ tsp salt

Preheat the oven to 350 F and place the pretzels and coconut sugar into a food processor and blend until fine crumbles form. Add in the melted butter and pulse until the mixture resembles wet sand. Press the mixture into the bottom of an 8x8 inch pan lined with parchment paper. Place all the filling ingredients into a blender or food processor and blend until smooth. Pour the filling over the crust and bake for 40-45 minutes. The center should be set and jiggle slightly if you shake the pan. Let cool completely before cutting into bites and serving.
