Make your own ooey-gooey, peppermint marshmallows with Great Lakes Wellness culinary Beef Gelatin. They're a delicious addition to your hot chocolate or on their own.
- ½ cup tapioca flour
- 2 tbsp Great Lakes Wellness Culinary Beef Gelatin
- 5 tbsp water
- 1 cup agave
- 1 tsp peppermint paste or extract
- ⅛ tsp salt
- 2-3 drops red food coloring
Spray an 8x10 baking sheet with non-stick spray and line with a piece of parchment paper. Dust well with tapioca flour. Place the gelatin and water into a bowl of a stand alone mixer fitted with a whisk attachment and stir to combine. Let sit while you prepare the agave. Place the agave into a small pot over medium heat. Bring to a simmer. Pour the hot agave into the mixer with the gelatin and turn on medium-high speed. Let mix until mixture is white, glossy and tripled in volume, about 8-10 minutes. Mix in the peppermint paste and salt. Spray a rubber spatula with non-stick spray and add one drop of red food coloring to the marshmallow. Use the spatula to fold just one time. Repeat x2. Pour the marshmallow into the pan and the red will swirl through as you do. Let sit at least 5 hours uncovered or overnight. Dust a cutting board with tapioca flour and flip the marshmallow out onto it and peel back the parchment paper. Use a greased knife to cut into squares and serve.
*Note - for thicker marshmallows, double the recipe or use an 6x6 inch pan or standard size loaf pan.
