Homemade Strawberry Gelatin Cups

This is a surprisingly tasty, all natural, lower calorie version of a gelatin mold dessert, packaged in cute little individual serving cups. You’ll feel good about sharing this snack with TONS less sugar than other traditional gelatin desserts plus added vitamins & antioxidants from the berries and of course that good-for-you gelatin base!

  1. Serves: 2-4
  2. Time: 10 minutes prep/cook, Refrig. 2 hours min.

Ingredients

  • 1 cup water⁠
  • 1/2 lemon juiced⁠
  • 2 cups semi-defrosted frozen strawberries
  • 4 Tbsp. honey
  • 2 Tbsp. Great Lakes Culinary Gelatin
  • 1 Tbsp. chopped strawberries per gelatin cup, optional⁠

Directions

  • Blend water, juice, lemon, semi-defrosted strawberries, and honey until smooth. Pour the mixture into a saucepan.
  • Over medium heat warm the strawberry mixture until it's hot. Add the gelatin, and whisk to dissolve.
  • Pour the hot strawberry mixture into individual cups. If you'd like chunky gelatin cups, add 1 tablespoon of chopped berries (fresh or frozen) to the bottom of each cup.
  • Refrigerate the gelatin cups for at least two hours or until they are firm.
