Ingredients
Dry Ingredients
- 1 ½ cup almond flour
- ½ cup Great Lakes Vanilla Collagen Powder
- ½ cup tapioca flour
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup + 2 tbsp chocolate chips
Wet Ingredients
- 3/4 cup coconut sugar
- 4 eggs
- ¼ cup coconut oil, melted and cooled
- 2 tsp vanilla
Directions
- Heat oven to 350 degrees and prepare loaf pan by greasing with additional oil or lining with parchment paper.
- In a medium bowl mix together all dry ingredients (except chocolate chips) until well combined.
- In a large bowl mix together all the wet ingredients until light and frothy.
- Add the dry to the wet ingredients and stir until just well mixed.
- Stir in ½ cup chocolate chips into the batter and pour into prepared loaf pan.
- Top with additional 2 tbsp of chocolate chips and bake for 48-50 minutes or until loaf is golden brown and a toothpick comes out clean when poked in the center.
