- 1-1/4 cups blanched almond flour
- 1 cup unsweetened shredded coconut (plus more for rolling)
- 1/3 cup Great Lakes Collagen Peptides
- 2 tablespoons coconut flour
- 1/4 teaspoon sea salt
- 3 tablespoons honey
- 2 tablespoons coconut oil
- 2 tablespoons fresh orange juice
- 1 tablespoon finely grated orange zest
- 1 teaspoon vanilla extract
Directions
- Preheat the oven to 275ºF. Line a baking sheet with parchment paper.
- In a food processor fitted with the steel blade, combine the almond flour, shredded coconut, collagen, coconut flour, and salt.
- Process until finely ground, about 25 seconds. Add the honey, coconut oil, orange juice, orange zest, and vanilla. Process until a dough forms.
- Roll the dough into 1-inch balls, then roll in shredded coconut and place on the baking sheet.
- Bake for 20 minutes, rotating the pan once halfway through. Cool completely before serving.
