Soft and sweet, chewy and delicious, these homemade granola bars take the cake…as in who needs cake! Made with health-conscious ingredients you can feel good about serving these to your kids or save for yourself. Ingredients
Bar:
- 1 tbsp Great Lakes Culinary Beef Gelatin
- ¼ cup room temp water
- ½ cup maple syrup
- ¼ cup coconut oil
- 1 ½ cup almond or walnuts, chopped
- 1 cup oat flour
- ¼ cup pecans
- ½ cup shredded coconut
- 2 tbsp hemp hulls
- ¼ cup cacao nibs
- 1 tsp cinnamon
- ½ tsp sea salt
Chocolate Drizzle:
- ¼ cup chocolate chunk or chips
- ½ tsp coconut oil
Directions
- Heat oven to 350 degrees and prepare 8 or 9 inch square baking dish by lining with parchment paper.
- In a large bowl stir the gelatin and water together until well mixed, let sit for 3 minutes.
- In a medium bowl, melt the coconut oil and maple syrup together.
- Carefully pour hot maple mixture into the bowl with gelatin and whisk well.
- Add all remaining ingredients to the bowl and stir until everything is well coated.
- Pour into prepared baking dish and using a rubber spatula press mixture into the pan to create an even layer.
- Bake for 20 minutes or until top is crisp and brown all over.
- Remove from oven and let cool for a few minutes, then move baking dish to fridge to cool completely.
- Once cool, remove from fridge and slice into desired bar shapes, place on parchment lined baking sheet or plate.
- Melt chocolate in a small bowl over a double boiler or in short bursts in the microwave. Once chocolate is melted, add the coconut oil, and stir well until everything is shiny and smooth. Drizzle chocolate over granola bars and place back in fridge to set.
- Once chocolate has hardened store finished bars in the fridge or freezer!
