Berry Collagen Waffles

These waffles are super easy to make and have a light and fluffy texture that crisps up nicely. It’s also a great way to use up some any berries that are about to turn and would make the perfect breakfast (or dinner) in bed treat (we won’t judge) 😉 By @freshlydafna

  2. Time: 30 mins

Ingredients

  • ½ cup milk of choice
  • 2 eggs, whisked
  • ¾ cup GF 1:1 flour or all-purpose flour
  • 4 tbsp Great Lakes Mixed Berry Collagen
  • 1 tbsp coconut sugar
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • dash sea salt
  • ¼ cup fresh berries

Directions

  • In a medium mixing bowl or in a measuring cup with a spout whisk together the milk and eggs until bubbly and well mixed.
  • Add in all remaining ingredients (except berries) and stir together until just fully incorporated.
  • Gently fold in the berries.
  • Heat waffle iron according to instructions and pour half the batter into the waffle iron and cook for about 3-5 minutes or until waffle is lightly browned and fluffy.
  • Repeat with remaining batter.
  • Serve with additional berries and some maple syrup!
